The seafood we source from around the South Island, all of it direct from the fishermen, is so spankingly fresh that it does not need too much help. Still we like to have a little fun, cooking with influences from our travels through Europe, America and Asia. Inspiration can come from the best restaurants in London, a roadside shack selling clams and cheese burgers along the Maine coast line in the United States or the local Chinese takeaway we went to as kids.

We only use seasonal produce, grown in New Zealand, organic where possible.

We like to pair our fish and shellfish with the best possible ingredients so we grow much ourselves at Fishbone Farm

We make our own chips, using a 13mm fry cutter and local Agria spuds

We use free range chicken and eggs
